The Best Healthy Muesli You Will Ever Eat

Breakfast is an extremely important part of the day, especially when you are trying to maintain a healthy weight, or lose weight and keep it off. In fact, there are many more reasons to eat breakfast than there are to skip it. If you want to avoid feeling hungry, deprived and sluggish, and if you want to lose more weight, eating a healthy breakfast will help set you up for the rest of the day. A healthy breakfast also promotes greater heart well-being and cholesterol a new study has found so why not give my homemade muesli recipe a go and you will find you will want to eat it every day because it tastes as delicious as it looks! Because it's homemade there are no added sugars, no artificial colours or flavours or fats like granola that is toasted in oil or loads of dry fruit that is high in sugar. Not to mention it's healthier than store bought, it's also a whole lot cheaper than buying boxes of muesli. This is really my favourite meal of the day because it tastes like a delicious dessert!

*You can make this in advance and store in a Tupperware container as muesli by adding whole packets of the rolled oats and seeds and cinnamon instead of single serves or make up 5 bowls for the week with the coconut water for bircher style, cover with glad wrap and put in the fridge ready to eat each day of the week. If you put in mini Tupperware bowls you can take to work or eat in transit.

Ingredients:

1/3 cup rolled oats

1 teaspoon pepita seeds

1 teaspoon sunflower seeds

1 teaspoon flax seeds

3-4 teaspoons chia seeds (added last on top for bircher style)

sprinkle ground cinnamon

1/3 cup coconut water

2 tablespoons plain greek yoghurt (I like Chobani and Evia)

Berries to serve

Directions:

For bircher/soaked - make a batch in seperate bowls for the week on sunday night and cover with glad wrap and leave in the fridge overnight so that the chia seeds soak up the coconut water and become soft. Take out of the fridge and add 2 tablespoons of plain greek yoghurt with a few cut strawberries or blueberries. If you don't have fresh berries you can add 1 teaspoon of sultanas or raisins and either eat immediately or take to work with a lid or eat on your way.

For muesli/dry - add almond milk with 2 tablespoons of plain greek yoghurt with fresh berries and serve.
